Greetings! Both in summer and autumn we continue to make healthy preparations, as well as eat fruits and vegetables in all forms. A very popular autumn-winter dessert in Greece - quince baked in the oven, or in Greek - κυδώνια ψητά στο φούρνο .

Recently I prepared such a quince myself for the first time, and it turned out like a real Greek woman! 🙂 My husband bought a large quince, he also peeled it - it turned out to be as hard as a piece of wood) In general, the Greeks are very fond of quince desserts - original jam and marmalade are also popular. We will do this too somehow, I have already set a goal for myself. Naturally, I’ll share the recipe.

Quince has been known for several thousand years, and people have long known its beneficial and medicinal properties. What makes me happy is that quince is recommended to be used for anemia; personally, this is just right for me. This golden fruit is so rich in all sorts of useful substances and vitamins, which I really regret that I didn’t pay attention to it earlier. Among the vitamins we find here provitamin A, B vitamins, as well as E, C, PP. Quince is rich in potassium and pectin, and contains a lot of carbohydrates, mainly fructose.

And since the best and healthiest way of cooking is baking, we will bake our quince in the oven with sugar, lemon and spices.

Ingredients

  • 4 quinces
  • 2 cups sugar
  • 2 cups water
  • 5-6 carnations
  • 3-4 cinnamon sticks
  • Half a lemon

Preparing baked quince

Wash the quince well, cut it into 4 parts (or 8, if very large), cut out the middle with the seeds. We don't touch the skin.

Lightly rub the quince with half a lemon to prevent it from turning black. Place on a baking sheet of a suitable size, skin side up, so that all the pieces fit.

Sprinkle with sugar, add water, cinnamon sticks and cloves.

Cover the baking sheet with foil and place in an oven preheated to 190 degrees, bake in this form for an hour and a quarter. In the process, a divine aroma fills your home, and household members, sniffing, will line up in your kitchen)

After this, we take out a baking sheet, remove the foil and carefully turn the quince over, after which we bake for another half hour.

Once slightly cooled, quince can be served with whipped cream, Greek yogurt or ice cream. In addition, it goes great with soft cheese - a very interesting combination. In the photo there is quince with yogurt; I didn’t have ice cream.

Baked quince can be stored in a closed container in the refrigerator for several days.

Such aromatic quince with whipped cream or ice cream is sometimes served in taverns as a treat from the establishment. This dessert is also very good during Lent – it helps maintain the body exhausted by abstinence from goodies. 🙂 My sister-in-law has a different recipe - she boils the quince first, and uses the broth to make a syrup in which the quince is baked. Next time I'll try to do exactly that. In any case, it will be delicious!

Bon appetit!

Quince is truly an amazing fruit. In appearance, it resembles an apple, but has firmer flesh, and its skin is covered with fluff. When you cut a quince, you will immediately feel an incredible aroma that is almost intoxicating with its sweetness. Quince, although a sweet fruit, often becomes an addition to various meat dishes (this is especially true for Caucasian and Asian cuisines). Desserts made from quince are also excellent. Baked in the oven as a whole, stuffed with dried fruits, quince always turns out delicious. At the same time, it goes very well with other autumn fruits - apple, pear, and pumpkin. Cooked together, these fruits taste simply delicious.
