Chopped cutlets are prepared from tiny pieces of meat with the addition of seasonings and various fillings; in my case, frozen boletuses and white ones collected this season were used.

Wash boneless chicken breast fillets thoroughly in cool water.

Finely chop the chicken with a sharp knife, just as you would cut vegetables, first across and then lengthwise.

Chop the onion head.

Rinse the mushrooms in a fine sieve, then chop.

Heat vegetable oil in a frying pan and fry onion, stirring, 3-5 minutes over high heat.

Add mushrooms, reduce heat. Fry, stirring occasionally, for 5 minutes.

Break off the pulp from the bread, moisten it, squeeze it out and put it in a blender bowl. Add basil leaves and grind everything.

Place the chopped chicken fillet in a deep dish. Add fried mushrooms with onions and the contents of the blender bowl. In addition, add: 2 chicken eggs, 2 level teaspoons of salt, ground black pepper to taste.

By thoroughly mixing the ingredients in the dish, we get a not too thick minced meat.

Heat 2-3 tablespoons in a large frying pan vegetable oil. Place the minced meat on it using a regular tablespoon. I do not recommend putting more than 1 spoon per 1 cutlet, otherwise they may fall apart when turned over. Fry the cutlets on the 1st side for 5 minutes over moderate heat.

Step 1: prepare the onions and mushrooms.

Wash the mushrooms, peel and grate on a medium grater.
Peel the onion, rinse with cool water and cut into small cubes.
Heat a little oil in a frying pan and fry the mushrooms and onions until tender, that is, literally within 5-7 minutes. Cook over medium heat, stirring all the time.

Step 2: Prepare the chicken breast.



Wash the chicken fillet, dry it and cut it into very small cubes. Transfer the chopped chicken to a plate, add suitable spices and mix very thoroughly.

Step 3: mix all ingredients.



Add chopped parsley and green onions to the chicken fillet.


Grate the grated cheese here. By the way, you can choose any cheese, as long as you like it.


Drain any excess oil from the onions and mushrooms, then add them to the plate with the other ingredients. Stir.


Grate, finely chop or press a clove of garlic through a press. Add it to the other ingredients.


Now you need to add mayonnaise and sour cream to the cutlet mass, and you should also add salt and pepper to taste. Mix thoroughly, add chicken eggs and mix everything again.


Lastly, add the wheat flour and stir immediately to avoid lumps.
As a result, the mixture for the cutlets comes out quite liquid; you need to add it to the frying pan and onto the baking tray using a tablespoon.

You can prepare chopped chicken cutlets with mushrooms and cheese in two different ways. Firstly, they can be baked in the oven. To do this, place the cutlets on a baking sheet lined with parchment, and then place them in a preheated oven. 200 degrees Celsius oven on 15 minutes.


Secondly, chopped chicken cutlets with mushrooms and cheese can be fried. To do this, heat vegetable oil in a frying pan and fry the cutlets in it until 4-5 minutes on each side over medium heat.

Recipe

1. Rinse the mushrooms and cut them into small pieces.

2. Wash the onion, peel and finely chop.

3. Heat the frying pan, add a small amount of vegetable oil, add onions and champignons. Fry for 7-10 minutes and remove the pan from the heat, because the mushrooms need to cool.

4. While frying the onions and champignons, you can start cutting the chicken breast. Rinse the chicken breast and dry it with a paper towel. Separate the chicken meat from the bones and skin, then finely chop the resulting fillet.

5. In a deep bowl, mix: chopped chicken breast, fried champignons with onions, sour cream, eggs, finely chopped garlic and dill, flour, salt, pepper.

6. Mix thoroughly and leave the mixture to brew for 20 minutes. The consistency of the mixture should be similar to pancake batter.

7. Like pancakes, spoon the cutlets into a heated frying pan with oil.

8. Fry over low heat on both sides under the lid for about 7-10 minutes.
