Pasta with broccoli in cream sauce recipe

Separate a head of broccoli into small florets.

In a saucepan, bring one and a half liters of water to a boil, add 1 level teaspoon of salt. Pour the broccoli florets into boiling water and cook after boiling again for 2-3 minutes.

Place in a colander, which we place on an empty pan. We will still need the broth, so we don’t pour it out.

Finely chop the garlic.

If you add cheese to the sauce, now is the time to grate it on a fine grater. Better fit here hard cheese like Parmesan.

Prepare ingredients for the sauce: flour, butter, cream. You will need a tablespoon of flour, but not at all.

Add boiled cabbage, stir for a minute or two.

Add cream sauce to broccoli. Dilute with the water in which the cabbage was cooked. If you don’t add cheese to the sauce, half a glass of broth is enough. Otherwise, use 3/4 cup.

Boil pasta in salted water for 10-15 minutes. Next we recline finished goods in a colander. After this, heat the frying pan, pour vegetable oil into it, throw in a chopped clove of garlic, add pasta and boiled broccoli, mix gently and remove from heat.

Now let's prepare the cheese and milk sauce. To do this, heat the flour in a dry frying pan until pinkish in color, add the butter and rub so that there are no lumps. Pour the milk into the pan and whisk thoroughly until smooth. Heat the sauce until thickened, but do not boil.   3. Add olive oil, broccoli and pasta to a preheated frying pan, mix well and remove from heat after 5 minutes.
  4. Place on plates.

In this sense, you can say that broccoli is my new love. The main methods I have mastered for preparing this super-healthy vegetable are, and an omelet with it. Surely, there are many ways to prepare this unique cabbage - they are yet to be mastered. For example, I want to try making a salad with it.

For the broccoli pasta, I used some leftover Italian cheese from my stash, but I think other cheeses would work too. Likewise, you can take any type of pasta you like and cook it according to the instructions on the package.

To prepare pasta with broccoli in creamy sauce, you need:

  • pasta – about 200 g (about 2 servings);
  • broccoli – about 500 g (1 “tree”);
  • heavy cream – 1–1.5 cups;
  • grated hard cheese – 1 cup;
  • finely chopped parsley - 1 tbsp. spoon;
  • salt and ground black pepper - to taste.

Cooking step by step:


  • Prepare the ingredients: bring water to a boil, add salt to taste, add pasta and cook until tender (according to package instructions) - about 10-15 minutes.
  • When they are ready, drain them in a colander, strain out the water, and set the pasta aside.
  • Pour the cream into a saucepan; place the saucepan over moderate heat.
  • Divide the broccoli into smaller florets, dice the stems, then add the cabbage to the cream.
  • Cook the cabbage with cream over low heat to your liking (5 minutes if you like it crispy, or a little more if you want it soft).
  • Then add the cooked pasta.
  • Season with ground black pepper and salt, stir.
  • Add all the grated cheese and chopped herbs.
  • Stir, turn off the heat.
  • That's all! You can serve pasta with broccoli and cream sauce.
