How to make soft yeast-free pizza dough? Pizza made without yeast dough

If you need to feed a large company in a short period of time, the best option for a hearty and tasty lunch or dinner would be none other than pizza. Thin, yeast-free pizza dough is perfect for quick preparation. Pizza is prepared much more quickly than with yeast. And the crust turns out thin, like in a real Italian restaurant. The recipe for the perfect thin dough is given below.

Recipe for thin yeast-free pizza dough

We will need:

  1. Partial glass of water (approximately 180 ml);
  2. 2-3 tbsp. oils (sunflower can be used, but olive oil is better);
  3. 1 tsp salt;
  4. Half tsp. soda;
  5. Flour.

Pour water into a large bowl, add salt. Then stir until the salt is completely dissolved.

Add oil and start kneading the dough. Sprinkle in the flour little by little in small portions. According to the consistency of the mass, the final result should not be too hard, but also not spreading to the sides. The dough must hold its shape so that it can be rolled out with a rolling pin.

Wait about an hour so that the pizza dough rests. Then you can roll out the cake.

Once you have formed a round and, importantly, thin layer, wrap the sides around the edges with your fingers. This will prevent the toppings from spilling over the edges of the pizza. If you use a microwave, place the crust side down on the grill grate and cook in the “grill” mode for 10 minutes.

Yeast-free pizza dough ends up being thin and crispy. As you can see, even a teenager can master this recipe.

Recipe for yeast-free pizza dough with kefir

Ingredients included:

  • From 2 to 3.5 cups of flour;
  • Half a liter of kefir;
  • 120 gr. vegetable oil;
  • Half a teaspoon of salt;
  • A tablespoon of sugar;
  • A full (but not heaped) teaspoon of baking soda.

Pour kefir into a large bowl, add salt, sugar, butter. Mix vigorously. It is impossible to say exactly how much flour the dough will take. Look at the consistency. Once the mixture has thickened after adding flour, you can pour the contents of the bowl onto the table. Just before doing this, it would be more prudent to generously sprinkle the work area with flour.

We continue to knead the dough. When it no longer sticks to your hands, take a rolling pin and roll it out, but not to a too thin layer.

By the way, it is also better to sprinkle the rocking pin with flour to prevent sticking.

When the cake has already been rolled out a little, take a third of a teaspoon of baking soda and sprinkle evenly around the entire perimeter of the circle. Then we wrap the circle in a roll and form a new circle with a rolling pin. Then take another third of a teaspoon of baking soda and repeat the same process. And so repeat one more time.

Stir and wait until the soda makes itself known and the dough, in turn, rises. It will take about half an hour to do everything. While you wait, you can prepare and chop the ingredients for the filling.

Yeast-free dough should roll out easily after resting. Form into an even layer and place on a baking sheet. And, of course, don’t forget about the nutritious filling. In this case, the more there is, the better.

Yeast-free pizza dough according to Italian recipe

The recipe for homemade pizza differs from the restaurant version. The difference is that we don't have wood stoves at home that are over 380 degrees inside. Just imagine that in such an oven, yeast-free pizza is cooked in a period of 60 to 90 seconds. While the homemade version of pizza is baked in the oven for at least more than half an hour. Yogurt and milk are added to the dough so that the dough, which does not contain yeast, is thoroughly baked, but at the same time does not turn into breadcrumbs.

Recipe for unleavened dough for Italian pizza

Don't forget to put the following products:

Premium flour (500 g);
Water (from 80 to 100 g depending on the moisture content of the flour);
Salt (a heaping pinch);
Baking soda (pinch) or baking powder (sachet);
Olive oil (5 tbsp or 25 g);
Milk (50 g);
Yogurt (150 gr).

As for yogurt, it should be present in the pizza crust if the dough is unleavened in order to artificially oxidize the taste of the dough. Also, the addition of yogurt will prevent it from tasting bland. If you are not using the yoghurt mentioned in the recipe, then the amount of water and milk should be 50/50.

Cooking process

First, mix all the liquid ingredients according to the recipe. First, add milk and water to the yogurt, and then olive oil. Add salt and soda to the flour. Be sure to sift the flour! Now we begin to knead the dough by hand or using a special mixer. At the same time, pour in the liquid part gradually. Yeast-free pizza is kneaded within five minutes.

Remember! Knead the yeast-free dough until it reaches elasticity and the desired softness. If necessary, add more water one tablespoon at a time. As soon as the mass stops sticking to your hands, collect it into a ball.

So, our yeast-free pizza dough is ready. Place it on film or in a container with an airtight lid. If you need to make another pizza from this amount (not rectangular, but several round ones), separate the lumps in advance. Place in a warm place for at least a couple of hours.

Ingredients:

  • Egg – 2 pcs.
  • Flour – 2 cups.
  • Milk – 125 ml.
  • Vegetable oil – 2 tablespoons.
  • Salt – 1 teaspoon.

Preparation:

  1. Sift flour into a deep bowl and add salt. In a separate container, combine vegetable oil, milk and eggs, beat with a fork. The main thing is to mix the ingredients well. There is no need to beat the mixture until foamy.
  2. Gradually add flour to the milk-egg mixture, stirring the dough with a spoon. Wait a few minutes for the flour to soak in the vegetable oil and liquid. During this time, a sticky mass forms.
  3. Knead the dough thoroughly. To do this, place it on a floured table and knead for 15 minutes. The result will be a smooth, elastic mass. Make a ball and keep under a warm, damp towel for a quarter of an hour.

After the time has passed, roll out the dough thinly, place it on a greased baking sheet, distribute the cheese, fish or vegetable filling and place in the oven. This amount of dough will make at least two pizzas.

Delicious pizza dough with sour cream

Delicious pizza dough made with sour cream is characterized by a soft and delicate structure, complemented by excellent taste, like manna. At the same time, cooking takes less time than in the case of a yeast analogue.

  • Sugar – 1 tablespoon.
  • Salt – 0.5 teaspoon.

Preparation:

  1. Sift the wheat flour into a large bowl. Break the eggs into a well in the flour, add sour cream, butter, salt and sugar. Knead the dough, thoroughly grinding the ingredients. For convenience, I recommend first combining sour cream with eggs, and mixing the resulting mixture with flour.
  2. Make a ball out of the dough. It's okay if the flour base sticks a little to your fingers. The main thing is that it rolls out easily. Cover the dough with cling film and leave aside for 40 minutes.
  3. After the time has passed, roll out the dough into a round layer 2-3 millimeters thick. The end result is a thin sour cream pizza with a crust. If you like a lush, open look, make the base thicker.

Pizza dough made with sour cream goes well with any topping. Bake the dish in the oven at 180 degrees, placing the workpiece on a greased baking sheet or in a mold with a bottom lined with baking paper.

  1. Kefir, sour milk or sour cream is also suitable instead - 400 g.
  2. Eggs – 2 pieces.
  3. Baking soda - half a teaspoon.
  4. Wheat flour - two and a half glasses.
  5. Fine salt - half a teaspoon.
  6. A little vinegar to quench the soda.
  7. Filling to taste.

The soda is quenched with vinegar, added to the total mass and mixed. The pizza turns out more tender and lighter if the flour is first sifted through a sieve. It is poured in small parts, while thoroughly mixing until smooth.

There will be enough dough for a large baking sheet. You need to cover it with parchment paper. The dough is laid out and the filling is placed on it.

  • Egg – 1 piece.
  • Wheat flour – 500 g.
  • A pinch of salt.

Kefir is poured into a fairly deep container, salt and about half of all flour are added. Add eggs to the mixture, separately beaten until foamy. Next, add half the oil.

Constantly stirring the dough, add flour in small portions. There should be no lumps in the mass. If necessary, you can add the remaining oil at the end.

The dough should not be too liquid, but not too thick either. After kneading, it must be left for 15 minutes at room temperature.

A thin layer is rolled out and the filling is laid out on top. It can be anything: vegetable, mushroom or with different types of sausage.

Before baking the pizza, the oven must be preheated to 180 degrees. Just before it's ready, sprinkle it with cheese.

It turns out fluffy, light and perfectly baked.

For it you will need:

  • Flour – 350 g.
  • A fourth of a teaspoon each of salt and soda.
  • Eggs – 2 pieces.
  • Butter – 150-200 g.
  • Kefir - about one glass.

The eggs are beaten, then salt is added and beaten again. Kefir is poured into a deep cup, baking soda slaked with vinegar is added to it, then beaten eggs and everything is mixed well. The mass should be homogeneous. Next, flour is added in small parts. This is necessary in order to achieve the desired consistency - it should be liquid. The last thing to add is butter, previously melted in a water bath. If necessary, you can add a little flour, but in the end the mass should be like thick sour cream. The dough will be fluffy due to the interaction of soda with kefir.

Yeast-free dough. Recipe for those who do not eat gluten containing foods

Weight watchers will love this recipe. For cooking you will need:

  • 400 g of gluten-free pizza base (it’s too difficult to prepare such an exquisite dry mixture at home);
  • 2 medium eggs;
  • 2.5 tbsp. spoons of vegetable oil;
  • 250-300 ml water;
  • 3 teaspoons sugar;
  • a teaspoon of salt.

Conclusion

Now you know how pizza is made (without yeast dough). We told you the recipe for preparing the base, and not just one, but several at once. Therefore, you will have the opportunity to choose. We wish you good luck in your culinary endeavors.

What will you need..

In a convenient bowl, mix the sifted flour, baking powder, curdled milk (in my case), egg, olive oil and salt.

Knead the soft, elastic dough until it doesn’t stick to your hands. If necessary, add more flour.

Let the dough sit in the refrigerator for about half an hour, and then divide it into two equal parts (the other half can be safely sent to the freezer if you do not plan to bake in the near future). On a floured surface, roll out the dough to a standard pizza thickness (thinner). I know that experienced “pizzaiolos” in Italy stretch the dough with their hands. But due to the lack of experience, I simply use a rolling pin)))))

Cover the dough with any tomato sauce or tomato paste. We sell ready-made pizza especially for pizza.

Additives on top. My version includes black olives and mushrooms.

And of course there’s cheese on top, what would pizza be without it.

Pizza, like its cousin “focaccia,” is usually prepared according to the “maximum temperature, minimum time” principle. In my oven at 220 C it takes 15-17 minutes. So don't go too far.

This is what comes out in the end... That's it, you can invite guests. I bet they'll think the delivery guy just delivered the pizza? :-)
