6. Caesar salad with homemade mayonnaise and anchovies

Ingredients:

Lettuce greens - five large leaves;

Garlic – 4 cloves;

Dijon mustard – 10 ml;

Wine vinegar – 30 ml;

Olive oil – 4 tablespoons;

Canned anchovies – 2 pieces;

White bread - 5 pieces;

4 tablespoons Worcestershire sauce;

A piece of Parmesan cheese.

Cooking method:

1. Tear the washed lettuce leaves into medium pieces with your hands and place in a cup.

2. Cut white bread into cubes, dry in the oven and place in a cup with lettuce leaves.

3. Prepare homemade mayonnaise: beat 2 eggs with a fork in a small cup, add a little wine vinegar, Dijon mustard, Worcestershire sauce, chopped garlic, beat again. Pour in olive oil while stirring constantly. Beat until thick.

4. Squeeze lemon juice into a cup with the salad, add shredded cheese, and top with homemade mayonnaise.

5. Add anchovies to the salad, stir thoroughly, and beautifully arrange parsley and dill leaves on top. You can also decorate the dish with cherry tomatoes.

Caesar salad with mayonnaise - secrets and subtleties

Lettuce leaves will not darken if you do not cut them, but tear them with your hands. It tastes best if you use Romaine lettuce.

If lettuce leaves have lost their appearance while lying in the refrigerator, you can refresh them and give them their original freshness by placing them in ice water for 15-20 minutes.

Crauts with a light garlic flavor will add an interesting taste to the salad. Preparing them is simple: squeeze a few cloves of garlic onto a hot oil in a frying pan, fry lightly, then carefully remove the garlic, and put the previously prepared croutons into the oil for a couple of minutes.

Prepare the Caesar salad just before serving on portioned plates. “Standing” salad will soften, losing its taste, as well as its appetizing appearance.

You can decorate the finished Caesar salad to your liking: boiled quail eggs, cherry halves, cucumber or sweet pepper rings, sprigs of herbs. Bon appetit.

5. Pour sauce over it and sprinkle with finely grated cheese.

Simple Caesar salad with cabbage and mayonnaise


Ingredients:

  • Chinese cabbage leaves - 5 pcs.
  • chicken fillet – 400 gr
  • parmesan - 150 gr
  • white crackers - 150 gr
  • lemon - 1/2 pcs
  • mayonnaise - 3 tbsp. l
  • salt, pepper - to taste.

Cooking method:

First, we need to marinate the chicken fillet, so rinse it in running water, put it in a bowl, sprinkle with a small amount of vinegar, vegetable oil, add salt and pepper. Then fry in a frying pan until nice golden brown.


Cut white bread or loaf into small cubes, about 1 by 1 cm, place on a baking sheet and dry in the oven.


For the dressing, combine mayonnaise, lemon juice, salt and ground black pepper.


Now put the cut lettuce leaves into strips in a deep bowl, then grate Parmesan cheese on a coarse grater, on top of which we place the chopped, fried chicken meat in small pieces and pour the sauce we have prepared on top of everything.


The salad is ready, serve it to the table!

How to make Caesar dressing


Ingredients:

  • Chicken eggs - 2 pcs
  • vegetable oil - 200 ml
  • mustard - 1.5 teaspoons
  • lemon juice - 2 tbsp. l
  • garlic - 2 cloves
  • anchovy fillet - 5-7 pcs
  • parmesan cheese - 20 gr
  • Worcestershire sauce - 1 tbsp. l
  • salt - to taste.

Cooking method:

1. Beat eggs into a blender bowl, add vegetable oil and mustard.

2. Using a blender, beat the entire mass until smooth.

3. Then peel the garlic and squeeze it out using a garlic press.

4. Squeeze about two tablespoons of lemon juice.

5. Add Worcestershire sauce for a spicy taste.

6. Anchovy fillet is a mandatory ingredient that should be included in this wonderful sauce.

7. Add salt to taste and mix everything thoroughly.

We do not season Caesar salad with chicken and croutons; we serve the sauce separately so that guests can pour it on their plates themselves. This way the dish will retain its original appearance even during a long feast.
