Recipe for cooking meat like a king. See what “royally” means in other dictionaries. What ingredients are needed

The “royal meat” dish is not at all intended for everyday meals. It is usually prepared exclusively for the festive table. The main feature of this dish is that from the simplest and most affordable products, a very chic delicacy is obtained, worthy of real kings. Try to feel like an august person for a while and cook the meat according to the recipe below. A lot of taste impressions are guaranteed!

Royal meat: history of the dish

Of course, the above dish, which is prepared with mayonnaise, has no direct relation to royalty. However, if we take into account the fact that in past times there was no such sauce at all, and sour cream was actively used instead, then we can assume that royal meat has its historical roots going back to the Peter the Great era.

It was at that time that all European dishes were very fashionable. Royal meat was then prepared from potatoes, mushrooms, ham, and pickles. All this was placed in pots and seasoned with a special sauce, which included sour cream, mustard and horseradish.

Experts cannot say 100% that royal meat with mushrooms and potatoes appeared precisely in those times. But they still insist - this dish has deep roots.

What ingredients are needed?

Nowadays, royal meat is prepared from the following products:

  • pork tenderloin - about 800 g;
  • potatoes in the amount of 8-9 pcs.;
  • pickled or fresh champignons - approximately 250-300 g;
  • two small onions;
  • hard cheese in the amount of 300 g;
  • mayonnaise - approximately 250-350 g;
  • vegetable oil;
  • butter;
  • spices to your own taste.

In summer, the above composition can be safely supplemented with fresh vegetables, such as bell peppers or tomatoes.

Royal meat in the oven: cooking stages

How to prepare the above dish? It's very simple, you just need to follow the following recommendations.

The pork tenderloin should be cut into thin pieces across the grain. Some housewives pre-marinate the meat by adding a pinch of pepper and salt or any other spices to their taste. If you wish, you can carefully beat off pieces of pork, but not too much, since it is already soft and tender.

Peel the onions and cut into half rings if it is a large vegetable, into rings if it is small.

Also peel the potatoes and cut them into thin slices (it is not recommended to make thick slices, as there is a risk that they will be soggy).

Cut the champignons crosswise (it’s more beautiful this way).

The layers are laid out on a baking sheet greased with vegetable oil in the following order:

  • chopped pieces of pork tenderloin;
  • onion rings;
  • potato mugs;
  • mushrooms with mayonnaise;
  • then again slices of potatoes.

It is important to grease the last layer well with mayonnaise. If you think that this sauce is harmful, then you can replace it with sour cream and add a tablespoon of mustard to it. It will also turn out very tasty.

Royal meat must be cooked in the oven for about one hour at a temperature of about 180 degrees.

Somewhere in the middle of the cooking process of this dish, you need to sprinkle it with pre-grated cheese.

If you use fresh mushrooms in this recipe, it is recommended to first peel, chop and salt them. When they sit like this for a little while, they will release the juice, and the dish will turn out juicier and more aromatic.

If you don’t have pork, you can safely use chicken or beef to prepare the above dish.

In no case is it recommended to cook meat royal-style with potatoes using processed cheese. It should be a product of exclusively durum varieties, for example, Dutch or Gouda. In this dish it is important that the cheese melts well.

Ingredients:

  • 1.5 kg pork pulp;
  • 200 g fresh champignons;
  • 3 eggs;
  • 1 tbsp. flour;
  • 300 g cheese;
  • 300 g cherry tomatoes;
  • a little mayonnaise;
  • a little vegetable oil for frying;
  • salt and pepper to taste.

How to cook king chops, recipe with photos

1. Wash the pork pulp, dry it with a paper towel and cut into slices approximately 1-1.5 cm thick.

2. Cover a slice of meat with cling film and beat it with a kitchen hammer. Thanks to the cling film, the meat holds together better and does not fall into pieces. When the slice is well beaten on one side, turn it over to the other side, cover it with cling film and also beat it.

3. Pour a glass of flour onto a plate. Add 2 pinches of salt and pepper and mix. Dip our future chops in flour and immediately place them on a plate. When the stack of chops is ready, set them aside. Let it sit in flour for at least 10-15 minutes.

4. Meanwhile, let's prepare other ingredients. Grate the cheese on a coarse grater.

5. Wash thoroughly and then chop the mushrooms.

6. Cut the tomatoes into small cubes.

7. Break the eggs into a small bowl and lightly beat with a whisk.

8. Heat a frying pan with a small amount of vegetable oil (2-3 tbsp). Dredge the chops again in the remaining flour and then dip in the egg.

9. Place in a heated frying pan and fry over medium heat until an appetizing crust forms.

10. Then turn the chops over and fry on the other side as well.

11. While the chops are frying, cover a baking sheet with parchment paper and preheat the oven to 180 degrees. Place the finished chops tightly next to each other (this is more convenient; if the mushrooms and tomatoes roll off, then onto the adjacent chops).

12. Place chopped champignons on top. If you use other mushrooms, it is advisable to fry them first. There is no need to fry the champignons; after 20 minutes of baking at 180 degrees, they will have time to fully cook.

13. Place tomatoes on top, lightly salt and pepper (we already salted the chops themselves, don’t forget).

14. Squeeze out a little mayonnaise.

15. Sprinkle cheese on top.

16. Place in a preheated oven for 20 minutes. It is better to place it as low as possible so that the cheese does not burn.

These are such very juicy, tender and tasty royal chops! Bon appetit!
